01

What this ally is

This is a restaurant group. It builds and operates everything that serves food and drink on the floor: the café, the kitchens, the live cooking, and the tasting counters.

It is also the bridge to the makers. The small producers on the floor sell packaged goods; this partner puts their products on a plate, which is how most people decide to buy them.

02

Who it suits

  • Operates multiple food and drink venues already, with the staff to do it
  • Has handled U.S. food safety, licensing and liquor permits
  • Can run a rotating or tasting format, not just a fixed menu
  • Has put a third-party producer's product on its own menu before
  • Will work on a revenue-share basis and accept transparent point-of-sale reporting

03

What you put in

  • Its share of the cash, paid in three instalments
  • The build-out and operation of the café, kitchens and tasting counters
  • Food licences and day-to-day food safety
  • Catering for the events programme

04

What you get back

  • 10% of the company
  • A share of the food and drink revenue it operates
  • 10% of any profit the company distributes

05

What you would actually do

  • Open and run the café, kitchens and tasting counters
  • Run live cooking and catering around the events calendar
  • Hold the food licences and keep the hygiene standard
  • Put local producers' products on the menu and rotate the tastings

06

How the shares are earned

Two tests, both of which must be met: paying each cash instalment on time, and meeting the agreed service levels — opening hours, how often the tastings rotate, the health inspection score, and the revenue targets.
